You may be surprised or even shocked to find out that one third of all food we produce globally goes to waste. To put that in perspective 1.3 billion tons of food is wasted per annum, which is enough to feed 12% of the population. To look at it a different way, to produce the amount of food the average person wastes per year, 498m2 of arable land is needed (almost the size of 2 tennis courts).
With an ever increasing population, the amount of food that we waste globally will naturally increase unless we do something about it. There are many contributing factors to this issue, which include food production, domestic food waste and also commercial waste. This post investigates methods in which commercial catering businesses such as restaurants, cafes, pubs and hotels can reduce their waste. After all 600,000 tons of food is wasted at a commercial level each year in the UK resulting in a substantial cost to the economy and a huge cost to the environment.
The food waste pyramid shown below is a visual representation of the process that needs to be adopted in order to reduce wastage. The most preferred option stands at the top of the hierarchy whereas the least preferred, in this case landfill is shown at the bottom.
First and foremost is to Reduce the amount of waste generated, you can do this by planning orders more accurately to prevent overstocking and over production. Investing in better storage facilities to maximise the shelf life of the food. Or identify alternative markets or methods to sell your food, such as specials boards or reduced prices.
Food that you can’t sell, but is still good to eat should be given to people in need. There are many charities set up to redistribute food amongst disadvantaged people such as the homeless.
Any food that is no longer fit for human consumption could be used as livestock feed. Wherever possible you should direct any bakery, fruit, vegetables and dairy products to farms and small holdings so they can feed it to their animals. Remember that 25% of food waste is made up of scraps, out of which 90% is reusable.
Energy recovery is a very expansive subject and covers a lot of areas, some of which we will look at in more detail later in this article. The under pinning ethos is that any unavoidable food waste is sent to composting, or to be used as fuel for transport, to create heat or electricity.
Finally any food waste that does not fit into the previous categories will be sent to landfill and disposed of. However it is important to remember that food waste in landfill sites gives off methane gas as it breaks down which is 21 x worse than carbon dioxide. Therefore this should only be used as an absolute last resort as there are many more environmentally friendly alternatives available.
If you’re a restaurateur or business owner you may be concerned about the costs associated with implementing measures to reduce the waste that your company generates and this may well act as a deterrent. However it is possible to significantly reduce your waste without spending a penny, quite the opposite in some cases as it is estimated a 20% reduction in food waste would save a restaurant approximately £2000 per year. Further to this, restaurants with good sustainability credentials could potentially be more appealing to an increasingly environmentally focused population. A study indicates that 70% of diners would prefer to eat in a restaurant with good environmental ethics when compared to a restaurant that doesn’t. So to summarise the points made in this paragraph, by minimising the impact that your business is having on the environment, in theory you can reduce costs and increase revenue.
How Can the Amount of Waste a Restaurant Generates be Reduced?
There are many ways that you can reduce waste in a restaurant, cafe or any other commercial catering business. To begin with you need to create a system for organising your waste, it is imperative that food is separated from other waste that you are disposing of. For example you may have one bin for organic waste, one for card / paper, one for metal and one for glass. When you have an infrastructure in place, you can then build on it. Train your staff well to ensure that they stick to your new waste management regime.
Sourcing ingredients locally not only supports your surrounding communities and reduces your impact on the environment due to lowered transit time. But it also means that you can buy just what you require and top up later if needed. This minimises the chances of food going off before you have chance to serve it to your customers.
Whilst it is often good to provide a variety of dishes on your menu, each dish could potentially be adding to your overall food waste. This is because your chef(s) will need to prepare a set of ingredients for each dish offered so you don’t run out. By carefully analysing your menu and perhaps in some cases reducing the number of choices or changing them to minimise preparation you can significantly reduce your overall food waste.
A widespread issue in commercial catering is that many diners leave a proportion of their food on their plate, a study shows that 27% of diners in the UK do this and 41% of them say that it is because the portions were too big. There are a number of ways to avoid this problem; A traditional method to combat this is to provide doggy bags so your customers can take any unfinished meals home with them to eat at a later date. A study has indicated that the majority of customers would feel embarrassed to ask for this service but would be more than happy to accept a doggy bag if it was offered to them. A more recent method of food waste prevention is to provide a “Top up System” where diners can ask for a second helping if the first portion wasn’t enough to fill them. An alternative method to this is to serve small, regular and large portions, priced accordingly and let the diner decide upon ordering.

4th – 5th February 2015 – The Source Trade Show
Based in the West Country, The Source Trade Show gives catering operators the opportunity to meet food and drink producers at all levels. From small scale local companies to key international suppliers. In 2014 The Source & Taste of the West merged with Expowest Westcountry Catering Trade Show at The Source Trade Show. As a result of the merger between the two already established exhibitions, many more visitors and exhibitors took part in the event this year and the same is expected in 2015.
Whilst you are at the show there will also be the opportunity to experience some of the additional features such as live demos from some of the UK’s leading chefs. Tasting sessions, and also a tourism conference where you listen to and interact with industry experts who will be discussing an array of topics related to the tourism industry.

17th – 19th February 2015 – Catex
Catex is the main catering event in Ireland, attracting more visitors than any other food service event in the country. The 2015 Catex exhibition is no exception, with 11k visitors and 200+ exhibitors lined up to mark the 50th anniversary of the event, there’s certainly going to be a lot to see and do. Catex lasts for three days and starts in the middle of February, the show is located at The Royal Dublin Society (RDS).
Apart from the obvious food and drink stands, there will also be contract furniture manufacturers, software companies, security solutions and catering equipment suppliers. Registration is free and can be done on the official Catex website.
4th – 5th March 2015 – ScotHot
ScotHot was established over 40 years ago and is now Scotland’s largest catering and hospitality exhibition. The trade show, which marks the beginning of the Scottish Tourism Week, is held at the SECC, Glasgow at the beginning of March and attracts approximately 8000 MD’s, chefs, managers and buyers from across the UK. There are many exhibitors showcasing their latest products and services at ScotHot, from catering equipment suppliers to contract furniture manufacturers and commercial interior designers. Visitors are given the opportunity to meet these suppliers, have face to face discussions with them and try out their products first hand. The event also gives business owners and managers industry insights that will help them to anticipate future trends.
The Scottish Culinary Championships are held at ScotHot which includes; the Cold Display, Scottish Restaurant Challenge, Chef of the Year and many other live competitions and “cook offs”.

11th – 13th March 2015 – IFEX Exhibition
The IFEX Exhibition is held at Kings Hall, Belfast and appeals to restaurants, hotels, bars, pubs and any other business operating in the leisure and hospitality industry. Many directors, managers and other senior members of staff visit the event to experience the latest products and services the exhibitors have to offer so they can keep up to date with the current market trends and stay ahead of competition. Although the show is one of the youngest to be featured on this page, the exhibition is owned and run by a leading hospitality event organiser that is recognised in the industry for proving high quality events that meet the needs of both the visitors and the exhibitors.
IFEX also hosts Salon Culinaire which is a collection of competitions, designed to test the skills of some 220 chefs over the course of the 3 day event. 17th – 18th March 2015 – Northern Restaurant and Bar
One of the best trade shows the North West has to offer, The Northern Restaurant & Bar even attracts thousands of visitors each year. Held at Manchester Central, the former GMEX arena which houses some 23000 square meters of floor space. Many suppliers will be exhibiting their products at the event, below is just a snap shot of some of the supplier categories you would expect to see there:

The Takeaway Expo has so much to offer, with 100’s of exhibitors who want to demonstrate or let you try out their new products and services. From food producers to payment gateways, from interior designers to burger van suppliers. If you own a takeaway or fast food business, this event should be high up on your list of priorities for the forthcoming year.
The Takeaway Expo also over 50 guest speakers such as the MD of Just Eat and also a director of KFC. Paris Chair, Low Stool and High Stool
The vintage Industrial trend has been around for a while now and is still showing no signs of slowing down. Chunky Laminate Tops
Following a recent surge of enquiries of 50mm thick laminate table tops, we have decided to introduce them into our range as a stocked item. Our Chunky Laminate Tables are available in either Walnut or Wenge wood colours and they come in a variety of sizes to cater for 2 seater, 4 seater and 5 seater groups. As with all of our laminate tops, the edges are finished with a matching 2mm strip of ABS edging. To the untrained eye you hardly notice it, but the ABS edging helps to prevent peeling and completely eliminates chipping edges. An extended warranty is offered free of charge on all of these tops to show just how confident we are in their durability. MFC Table Tops
To offer a cheaper alternative to our premium laminate tables, we have introduced 25mm thick MFC table tops in beech, white and wenge colour ways. Similar in concept to laminates, however these tops are manufactured with a melamine faced chipboard core that still offers the same durability as the MDF core counterparts but at a fraction of the price. Our MFC tops are available in a variety of sizes including popular 700mm square, 1200mm round and 1500 x 700mm tables which can sit up to 6 people. We aim to hold all sizes in stock but if the size you are looking for is not available, the turnaround time to manufacture these table tops is only 1 – 2 weeks. Bespoke table tops are not a problem either, if you require a particular size that is not listed please get in touch with sales who will be happy to quote for your requirements.
Extra Large Table Bases
Many restaurants, bars and cafes like to have at least one table that can accommodate large groups of people, sometimes up to 12 around a single table. Up until now finding a table base that will support such a large top and will still fit in with your existing commercial interior has been quite a challenge. Well not any more with the introduction of not one, but two styles of extra large, heavy duty metal tables. The largest being the Massimo Table Base that will accommodate a table top measuring up to 2000mm diameter or 1800mm square, that’s enough to sit 12 – 14 people for full dining. Manufactured from heavy duty cast iron with a four column rigid construction and a black powder coated finish these tables look great in just about any modern contract interior. Secondly we now stock the Valencia Dining Table which is manufactured from ultra hard wearing mild steel that’s finished with a grey powder coating. Not quite as large as its counterpart, these table bases will support a 1600mm diameter or a 1400mm square table top. Which is still enough to sit 8 – 10 customers with relative ease for full dining. Many of our customers use this table base to accommodate a round table top in the centre of curved booth seating. To round it off the Massimo and Valencia table bases both come with an extended 3 year guarantee so you can be rest assured that they are durable enough to withstand even the harshest catering environments.
Fabio Table Base
If you are looking for a practical and flexible dining table base then the Fabio may be for you. Contract Furniture Designs Still to Come in 2014
Our product range has grown significantly this year with new additions being made on a monthly basis, but we’re not done yet! Before the years out we expect to introduce another chair range to sit alongside the Hoxton range that offers a similar concept but with a different shell design. We also plan to stock additional sizes for some of our laminate tops such as the 1800mm Dia Wenge Laminate Top or the 1500 x 700 Walnut Laminate Top. These additional sizes will allow our customers to cater for larger groups of people and be able to offer more flexibility in their restaurants, cafes, pubs and bars. In the latter part of the year we will start to stock conference, office and reception seating to appeal to the corporate and education sectors. Warner Contracts Ltd. Have recently been awarded a contract to supply commercial dining chairs and bar stools to a café which is owned by Harrogate Borough Council. The café is located inside the Hydro Leisure Centre in Harrogate, serving drinks and snacks to people who have just been for a workout.
Harrogate Borough Council choose our Fiesta Chairs and Fiesta Bar Stools to use in the café for their robustness and stacking abilities. The cafe furniture was delivered to the site in Yorkshire at the beginning of August 2014 where it was installed by the contracts on site. We look forward to hearing from the council again in the near future regarding their next project.

Belted Burgers contacted our sales team recently to purchase commercial furniture for their new up market burger restaurant in Carlisle, Cumbria. After discussing their initial requirements we drew up a specification which included furniture for their restaurant dining room, bar area and also an area outside the restaurant where customers could enjoy their meal outdoors. The restaurant is housed in a former general post office on Warwick Street and for this reason the client wanted to modernise the interior slightly but also maintain some of the traditional aspects of the old building to create a contrast in the aesthetics and character.
Our proposal for the dining room included Maria 4 Leg and Maria Twin Pedestal dining table bases which support 2 seater Black Laminate Table Tops. We also supplied an extra large bespoke dining table to fit inside their booth seating.
We put forward our Taunton High Stools in both cream and brown faux leather for the bar area to go with our Continental Poseur Tables in black cast iron, this was to maintain the traditional aesthetics of the bar area which contrasts with the modern interior of the dining room.
Belted Burgers wanted to create an inviting exterior to the premises by adding some high quality outdoor furniture; they also wanted this furniture to be able to stack for convenient storage. The Relish Armchair is currently one of the best selling chairs in the UK. As a piece of contract furniture it ticks all of the boxes you need it to. The welded steel frame is strong and durable. The finish is hard wearing and not easily chipped by your customers. The size of the chair is adequate enough to be comfortable but not oversize so you can fit the optimum number of covers in your restaurant, bar or cafe.
